The pour over brewing method is a preferred method of brewing as it emphasizes clarity of flavor and brightness of the beans. We find that our Bali & Sumatra varieties are best suited for this delicate method of brewing. Though pour overs are straight to the point, the process takes a little time. For best results, aim for a three minute process from start to finish. Its worth it.
Grind the coffee to a medium-coarse grind. Add filtered water to a gooseneck kettle and bring to a boil.
Place your filter of choice into the Hario v60 and wet thoroughly with hot water, allowing all the water to drain through. Add you grounds to the "washed" filter. We recommend about 4 level tablespoons.
Once the water comes to a boil, turn the kettle off and let it sit for 30 seconds before pour just enough water to cover the grounds. This will allow the coffee to "bloom." Once the initial water has dripped through, continue pouring the remaining water (about 12oz) in concentric circles, ensuring all the grounds are saturated. Take your time! A perfect pour over takes about 3 minutes from start to finish.
Once all the water has drained through, remove and discard the filter.
